Mushroom garlic soup


  • Button mushroom slices- 50gms
  • Chopped onions- 1 large
  • Chopped and peeled garlic cloves- hand full
  • Salt to taste
  • Dill weed- 1/4 spoon
  • Butter- 1+1 spoon
  • Cream- 1/2 cup
  • Grounded white pepper- 1/4 spoon
  • Olive oil- 1 spoon
  • Peeled and chopped apple- 1
  • Chicken stock- 1 cup
  • Thyme- 3sprigs
  • Parsley stems- 4
  • Mustard powder- 1/2 spoon
  • Chopped parsley to garnish


Step 1: Heat oil and butter in a large pot over medium flame.

Step 2: Add onions, garlic and cover with a lid and cook until soft.

Step 3: Add apple and cook it for 10min and stir it well in between.

Step 4: Add stock and boil at low flame, let it simmer for 15min.

Step 5: Blend soup into fine puree, add mustard powder, dill weed, pepper and salt. at low flame simmer soup for 10-15min.

Step 6: Add melt half spoon of butter at low heat and add half of the mushroom slices.

Step 7: Cook mushroom until it turns into brown color and pour into soup puree.

Step 8: Melt remaining butter in a pan add remaining mushrooms and stir it well for 2min. add sauted mushrooms to the soup.

Step 9: Add cream and simmer it by stirring it well, remove from heat.

Step 10: Serve the hot mushroom soup in a bowl.

Rosemary bean soup



  • Fresh rosemary sprigs- 3
  • Bay leaves- 2
  • Thyme- 2 sprigs
  • Garlic – 1
  • Dried white beans- 250gms
  • Lemon juice- 2 spoons
  • Grated lemon zest- 1/2 spoon
  • Grounded pepper- pinch
  • Salt to taste
  • Water as required
  • Parsley leaves
  • Peeled and chopped garlic
  • Olive oil


Step 1: Soak beans overnight, next day rinse them well and boil until half done.

Step 2: Add herbs to beans for flavor and continue boiling.

Step 3: After it is completely done strain beans and water separately.

Step 4: Heat olive oil in a pot at low flame, add chopped garlic, herbs saute it well.

Step 5: Add beans, lemon zest, salt, pepper and beans boiled water to the pot, heat them for 10-15min till it lightens.

Step 6: Off the flame, add bread slices, olive oil, garlic and parsley to the soup before serving.

Cashew cauliflower soup



  • Florets of cauliflower- 2cups
  • Raw cashews- 3/4 cup
  • Water- 1 cup
  • Unsweetened almond milk- 2 cups
  • Maple syrup- 1 spoon
  • Coconut oil- 1 spoon
  • Garam masala – 1 spoon
  • Turmeric powder- 1 spoon
  • Orange juice- 1 cup
  • Cinnamon – 1/4 spoon
  • Salt to taste
  • Garlic- 1
  • Black pepper- 1/2 spoon
  • Onion – 1 small
  • Curry seasoning- 1 spoon
  • Miso paste- 2 spoons


Step 1: Preheat oven at 350 degrees

Step 2: Roast cauliflower for 20min until it turns brown color.

Step 3: Heat pan, saute onions in coconut oil, add curry seasoning, turmeric, salt, pepper, garlic and cinnamon. stir all the ingredients well.

Step 4: Add sauted ingredients in a blender and make into fine puree.

Step 5: Blend until thick and add to the vessel heat soup at low flame.

Step 6: Garnish with cilantro, basil and rosemary leaves.

Step 7: Serve the delicious hot cauliflower soup.

Cabbage soup



  • Chopped cabbage-  2cups
  • Minced garlic- 1 spoon
  • Pepper – pinch
  • Salt to taste
  • Chopped cilantro to garnish
  • Chopped onions- 2
  • Vegetable broth- 2 cups
  • Sauce to taste


Step 1: Combine cabbage, minced garlic, salt, pepper, vegetable broth, onions in a large sauce pan. simmer it for 15-20min.

Step 2: Transfer half of the soup to blend until smooth.

Step 3: Recombine soup and heat it well. Sprinkle cilantro on soup.

Step 4: Add salt, pepper, sauce to taste.
