- Olive oil- 2 spoons
- Minced shallots- 2
- Kosher salt- 1/2 spoon
- Chicken broth- 3 cups
- Grated parmesan cheese- 1/2 cup
- Lemon zest- 1 spoon
- Chopped celery stalk
- Peeled and chopped carrot-1
- Thyme sprigs-2
- Parmesan rind- 1 piece
- Star paste- 1cup
- Frozen peas- 1/2 cup
- Water- 1 cup
Step 1: Heat olive oil in a sauce pan over medium heat, add celery leaves, chopped carrot and shallots. cook it for 5min until softens.
Step 2: Add sprigs thyme, chicken broth, water and parmesan rind. stir it well.
Step 3: Simmer the mixture and cook for 10-15min, add pasta and stir it well to prevent lumps.
Step 4: Cook it well until paste is cooked and liquid thickens slightly.
Step 5: Add frozen peas and stir it well and off the flame.
Step 6: Serve the soup in bowls and use grated cheese and lemon zest as toppings.
