How to make bellam avakaya / bellam maagaya

Bellam avakaya is another popular recipe made with raw mangoes. Taste of the pickle is very delicious and it is served with hot rice. Bellam avakaya, name itself states that taste of the pickle is sweet. Raw mangoes are used to make this pickle, these pickles are made in summer. It is simple to prepare with few ingredients. We can also use amla as an mango substitute. Let us see the procedure of making delicious bellam avakaya.


  • Raw mangoes- 3
  • Turmeric powder 1/2 spoon
  • Chilli powder- 2 spoons
  • Roasted fenugreek powder- 1 spoon
  • Salt- 3 spoons
  • Jaggery- 1 cup
  • Hing- 1/4 spoon
  • Oil- 1/2 cup


Step 1: Wash and dry the mangoes, later cut into thin slices.

step 2: Combine turmeric powder, mango slices and salt in a bowl.

Step 3: Set aside over night and sieve the water next day.

Step 4: Let the pieces get dry in sun completely for 2 or 3 days.

Step 5: Boil 2 cups of water and off the flame. keep aside till the temperature reduces.

Step 6: Add dried mango slices and leave it to soak in water for an hour. later dry them

Step 7: Boil jaggery and keep aside to cool.

Step 8: Combine chilli powder, fenugreek powder and soaked mango. mix all the ingredients.

Step 9: Add jaggery syrup to the mixture and mix it well.

Step 10: Heat oil in a pan, add hing and fry it for few seconds and add it to the pickle.

Step 11: Store in a bottle and refrigerate it.

Step 12: Serve the pickle immediately along with hot steamed rice.
