Tomato pickle, a popular recipe usually prepared in the summer season. Tomato pickle is the most famous pickle in andhra. Recipe is a bit spicy and have delicious taste. This mouth watering recipe is served along with tiffin, as side dish for curd rice and it is perfect combination with white steamed rice and ghee. Everyone love to eat this tangy pickle. It is simple to make within no time. Let us see the procedure of making the delicious tomato pickle.
- Tomatoes- 1 kg
- Tamarind sauce- 1 cup
- Red chilli powder- 1/2 cup
- Salt- as needed
- Turmeric powder- as required
- Methi powder- 1spoon
- Mustard seeds- 1 spoon
- Urad dhal- 1 spoon
- Jeera seeds- 1/2 spoon
- Red chillies- dried- 4
- Curry leaves- 2 sprigs
- Garlic pods- 1/4 cup
- Oil- 1/4 cup
Step 1: Combine tomato slices and required salt, place plate under sun to dry for 1or 2 days.
Step 2: Next, heat oil in a long bottomed vessel, add tomato slices and cook them 2-5min at medium flame.
Step 3: Stir it well till the oil separated completely, later turn off the heat.
Step 4: Add tamarind sauce and place a lid, set the recipe aside till the temperature reduces.
Step 5: Check and add sufficient salt , grind tomatoes mixture into fine paste.
Step 6: Add chilli powder and methi powder and stir it well.
Step 7: For tempering – take a pan add 2 spoons of oil, mustard seeds, red chillies, garlic pods, jeera seeds, urad dhal. Saute the mixture for a minute.
Step 8: Off the flame and the tempering to the tomato pickle and mix it well.
Step 9: Serve the pickle with hot steamed rice and ghee.
