Olive oil cake with chocolate glaze as topping is a mouth watering recipe made with seedless grapes and cornmeal. Ingredients used to make this recipe are low fat and rich in fibre. Cake is very delicious in taste and simple to make within no time. Let us see the procedure of making delicious item
- Seedless grapes- red- 2 cups
- Grounded corn meal- 1/2 cup + 2 spoons
- Plain flour- 1/2 cup
- Baking powder- 1/2 spoon
- Eggs- 4
- Sugar- 3/4 cup
- Orange zest- 1 spoon
- Olive oil- 1/2 cup+ 1 spoon
- Granulated sugar- 2 spoons
- Water- 1/4 cup
- Heavy cream- 1/2 cup
- Finely chopped dark chocolate- 150gms
- Orange juice- 1/4 cup
- Salt to taste
Step 1: Preheat oven at 325 degrees , place grapes over baking case and pour olive oil over it. Roast until soft for about an hour.
Step 2: For cake, grease butter on the cake pan, whisk cornmeal, plain flour, baking powder and salt in a small bowl. set aside.
Step 3: In a large bowl, whisk eggs and sugar until color of mixture gets lightened.
Step 4: Later add orange zest, olive oil and orange juice and whisk it well.
Step 5: Add baking powder, granulated sugar and salt. Combine all the ingredients to avoid all the lumps.
Step 6: Add roasted grapes and stir it well. Pour batter into pan and bake cake mixture for an hour till it turns into brown color.
Step 7: Next set cake aside till it gets cool,
For chocolate glaze – place cream, sugar, water over medium sauce pan. boil till cream gets soft. Add chopped chocolate pieces and stir it well until chocolate dissolves completely.
Step 8: Place cake over baking sheet and pour the chocolate glaze over cake.
Step 9: Store cake in refrigerator or 30min and cover cake with wrapper.
