How to make mango fool and fruit trifle using summer fruits

Mango fool and fruit trifle are the two different recipes served chilled during hot summer. Both are simple to make with different types of summer fruits such as peaches, strawberries, mango, passion fruit etc. Mango puree is combined with low fat ingredients and almond bread slices to make a delicious chilled mango fool. Fruit trifle is made with juicy fruits such as strawberries, peaches and passion fruit. Both recipes are yummy with creamy texture. Let us see the procedure of making chilled cakes items.

Ingredients:

  • Low fat cheese – 150gms
  • Ripe mangoes, peeled and chopped- 2 large
  • Almond bread- 8 pieces
  • Low fat vanilla bread- 1/2 cup

Procedure:

Step 1: Place cheese in a food processor, process until creamy, add custard and stir it well till it combines, transfer mixture into large bowl.

Step 2: Make mango pieces into fine puree, divide 1/4 puree in a bowl and add remaining mango puree into cheese mixture.

Step 3: Fill mango-cheese mixture in a glass, add mango puree as topping for each glass.

Step 4: Cover a lid and store in refrigerator for 15min.

Step 5: Serve the mango fool with almond bread.

Fruit trifle

Fruit trifle

Ingredients:

  • Mascarpone cheese- 200gms
  • Vanilla custard- 1 cup
  • Fruit cake- 1/4 cup
  • Strawberries- 250gms
  • Passion fruit- halved
  • Thick cream whipped- 300ml
  • Shredded coconut- 1/4 cup
  • Strawberry flavored jellies- 1/2 cup
  • Sweet sherry – 1/4 cup
  • Fruit cake- 400gms

Procedure:

Step 1: In a large bowl, add strawberry jellies, cup of hot water stir it well till the crystal jelly dissolves.

Step 2: Stir in 2 cups of cold water and store mixture in refrigerator for 2hrs.

Step 3: Place mascarpone cheese and vanilla custard in a bowl, beat it well until smooth and set aside.

Step 4: Cut light fruit cake into thick slices and place in a dish.

Step 5: Drizzle sherry over it and top with half of the custard mixture.

Step 6: Add jelly mixture over custard mixture.

Step 7: Add passion fruit pulp, strawberries and peaches as toppings to the recipe.

Step 8: Repeat the process of layering one after the other like cake, sherry mix, jellies, passion fruit, strawberries and at last peaches over it.

Step 9: Add whipped cream as topping to the fruit trifle and cover with plastic wrap.

Step 10: Store in refrigerator overnight and sprinkle shredded coconut before serving.
