Indian summer salad
Healthy Indian summer salad with fresh parsley and mint leaves is served chilled. Summer salad is very nutritious with different varieties root vegetables. It is a perfect dish in hot summer with all the juicy vegetables. Ingredients which are used for dressing salad adds more taste to it. let us see the procedure of making summer salad.
- Mint leaves- 1 cup
- Red onions- small- 1
- Radish bunch
- Carrot- 3 medium
- Courgettes- 2
- Wine vinegar- 1 spoon
- Mayonnaise- 1 spoon
- Olive oil- 2 spoons
- Dijon mustard- 1 spoon
- Parsley leaves- 2 spoons
Step 1: Peel skin of carrot and grate them in a large bowl.
Step 2: Clean and cut radish and courgettes into thin slices.
Step 3: Chop red onion and mint leaves into small pieces.
Step 4: Mix all the vegetables in a bowl.
Step 5: Whisk vinegar, dijon mustard and mayonnaise until smooth.
Step 6: Add oil and whisk it again.
Step 7: Add salt and pepper to vegetable slices.
Step 8: Dizzle the vinegar mixture over salad and mix it well.
Step 9: Sprinkle parsley leaves andpreserve salad in fridge for 1hr before serving.
