How to make cauliflower walnut soup

Boiled cauliflower florets and walnut soup. It is very hot and spicy soup with delicious taste. It has high nutritional values that are beneficial to health. Cauliflower walnut soup is easy and simple to make in a short time. Cream adds more taste to the recipe.

Ingredients:

  • Medium cauliflower-1
  • Vegetable stock- 1/2 cup
  • Milk- 2cups
  • Walnut pieces- 25gms
  • Salt to taste
  • Cheese- 1 spoon
  • Black pepper- 1/2 spoon
  • Chopped onion-1/2 cup
  • Mint leaves- 5-6leaves
  • Cream- 2 spoons

Procedure:

Step 1: Take a round bottomed vessel, add water and boil it for few minutes.

Step 2: Cut cauliflower into small florets and add to the boiled water.

Step 3: Place a lid on vessel and cook cauliflower for 15min.

Step 4: Later add milk to the boiled cauliflower and stir it well.

Step 5: Add walnuts and cook it for 2-5min at low flame.

Step 6: Off the flame and keep it aside.

Step 7: After temperature reduces, using grinder mix all the mixture into fine puree.

Step 8: Heat cheese in a pan, add pepper crushes and salt sauté it well.

Step 9: Add grinded puree and stir it well for 2min.

Step 10: Off the flame, add cream to it and serve the hot soup.

Step 11: Garnish cauliflower soup with Chopped coriander leaves.
