How to cook potato mint curry

A delicious recipe with mint flavor is potato mint curry. It is very simple to prepare with few ingredients. We can use basil or coriander leaves instead of mint leaves. The recipe is very spicy and have nutritional values. Moreover it is the perfect combination with roti. Recipe is used as stuff in samosa’s.

Ingredients:

  • Potato- 1/4 kg
  • Chopped green chillies- 3
  • Fresh mint leaves paste- 1/2 cup
  • Cumin seeds- 1/4 spoon
  • Coriander powder- 1 spoon
  • Chopped onions- 1/2 cup
  • Chopped tomato- 1/2 cup
  • Red chilli powder- 1/2 spoon
  • Oil as required
  • Salt to taste
  • Dried mango powder- 1/2 spoon
  • Turmeric powder- pinch

Procedure:

Step 1:Boil potatoes in a pressure cooker.

Step 2: Peel the skin of potatoes and cut into small pieces.

Step 3: Heat oil in a pan, add cumin seeds, onions, chopped green chillies and turmeric powder saute it well for 2min.

Step 4: Add mint leaves paste, red chilli powder and dried mango powder and mix it well.

Step 5: Add chopped tomato for gravy and stir it well.

Step 6: Add potato pieces , coriander powder and stir it well for 2min.

Step 7: Add salt and mint leaves, stir it well and place a lid.

Step 8: Cook it for 5min at low flame.

Step 9: Serve the recipe with roti or plain rice.
