How to make mugalai chicken biryani

Mugalai recipes are rich in carbohydrates, proteins, vitamins and fat. They prefer rich food with delicious taste. Mugalai chicken biryani is a north Indian dish cooked in different style. It is very tasty and spicy recipe easy to prepare at home. let us see the procedure of making mugalai chicken biryani

Ingredients:

  • Chicken – 500gms
  • Minced meat- 1kg
  • Ghee- 2 cups
  • Chopped onion- 2cups
  • Rice- 1/2 kg
  • Kesar- 1/2 spoon
  • Bay leaves- 4
  • Yogurt- 1/2 cup
  • Cloves- 8
  • Cardomom-8
  • Pepper corns- 15
  • Ginger and garlic- 2 spoons
  • Coriander seeds / dhaniya- 2 spoons
  • Cumin seeds powder- 1 spoon
  • Salt to taste
  • Chilli powder- 1 spoon
  • Turmeric powder-pinch
  • Cinnamon- 2 stick(medium size)
  • mint leaves- 5

Procedure:

Step 1: Heat 4 spoons of ghee and fry the chopped onion till it turn into brown colour.

Step 2: Add half of spices such as cloves, cinnamon, cardamom, pepper corns to it and fry for 2min.

Step 3:Add fresh chicken and minced meat and stir it well.

Step 4: Cook it for 5-10min till it turn into brown shade.

Step 5: Add ginger and garlic paste, chilli powder, turmeric powder, cumin and coriander powder. stir it well for 2 or 3 times.

Step 6: Add 2cups of water and place a lid cook the recipe till the chicken gets boiled.

Step 7: Add saffron and yogurt in a bowl and stir it well using beater.

Step 8: Now add yogurt to the chicken and cook it for 30min at low flame.

Step 9: After chicken gets boiled off the flame and keep aside.

Step 10: Heat ghee in long bottomed vessel, fry bay leaves and remaining cloves, cinnamon, cardamom, pepper corns.

Step 11: Add onions and fry it for 2min.

Step 12: Add washed rice and fry them till it turns into brown colour.

step 13:Add pinch of salt and sufficient water to the rice for boiling.

Step 14: After rice gets boiled, take a vessel spread rice as a layer and chicken recipe as another layer, repeat it alternatively.

Step 15: Garnish with mint leaves and serve with any gravy or raitha.
