How to cook summer soup using vegetable stock

Summer soup is made using fresh vegetable stock. We can use different ingredients for seasoning the delicious soup. As it was a mouth watering recipe with fresh pepper flavor and loved  by all. Sometimes summer soup is served at the time of lunch. Let the see the procedure of making summer soup using fresh vegetable stock.

Ingredients:

  • Chopped spring onions – 1 cup
  • Chopped courgettes- 3
  • Frozen peas- 200gms
  • Mint leaves- 15-20  leaves
  • Greek yogurt- 2 spoons
  • Watercress chopped- 50gms
  • Vegetable stock- 500ml
  • Olive oil- 4 spoons
  • Pepper flakes- 1/2 spoon

Procedure:

Step 1: Heat olive oil in a sauce pan, add spring onions, courgettes. stir it well.

Step 2: Cook them for 2-5min, add frozen peas and hot vegetable stock and boil the whole mixture for 5min.

Step 3: Cover and simmer for 4min and off the flame.

Step 4: Stir it well until they wilted.

Step 5: Using processor , make into fine puree by adding yogurt.

Step6:  Later serve in a pan and adding seasoning to taste before serving.

Step 7: Serve the hot or cold soup according to your taste.
